Grandma's Veggie Bake



Here is the recipe for Freya. I vary it a bit according to what I have, and usually use celery instead of courgettes when making it for Freya. Also often add diced sweet potato if I have any, but here is the basic recipe as given.

Ingredients

1 tbsp oil
2 red onions
2 red peppers
3 courgettes. (Or celery)
1 aubergine
400g chopped tinned tomatoes
3 potatoes, thinly sliced
150ml double cream
Chopped basil
85 g cheese, grated.

Method

1. Heat oil, cook onions for 2 mins, add peppers, courgettes (celery), and aubergine and cook for 10 mins with a splash of water till soft.

2. Stir in tomatoes and 4 tbsp water. Season well. Bubble for 15 mins gently.

Heat oven to 160c.

3. Tip potato slices into a bowl. Season, then pour over the cream. Toss potatoes to coat in cream.

4. Put veggie mixture into an ovenproof dish. Stir in basil. Lay potato slices on top in spiral and pour over the remaining cream. Cook in oven uncovered for 40 mins.

5. Remove from oven and increase the heat to 180c. Scatter grated cheese over the top and bake for a further 20 mins till golden and bubbling.

Serve with salad and garlic bread.
