3 cups of sherry or red wine vinegar (about 8fl oz per cup)
3 cups of sugar (brown if poss) but I've used both
2-4 bay leaves
20 black peppercorns crushed
Place all ingredients in large stainless steal saucepan.
Bring to boil and simmer (very gently) until liquid has evaporated and onions are translulcent. (Should take approx 1-1.5hours)
Pour into sterilized jars keeps for 4-6months in the fridge.
Makes approx 2-3lb Its delish. with cheese and meats.
